Arugula Tortellini

1 lb. cheese or meat tortellini
4 oz. sliced bacon
6 Tbs unsalted butter
2 cups arugula (
you can also use spinach or basil)
1/4 tsp Kosher salt
1/4 tsp black pepper

  • Cook tortellini according to package.
  • Cook bacon until crisp and break into pieces.
  • Brown butter in a skillet
  • Them add arugula, salt, pepper, and cooked tortellini.
  • Toss well. Serve.

This recipe looks great! I may have to put it on my menu for next month - or maybe even later this month for one of those few days I haven't decided what to cook. I think I'll have to go with spinach instead of arugula (not a fan).

Great blog idea, too! I've started working on a recipe blog since I post so many recipes. I've started taking pictures of what I cook so I can post a picture along with the recipe. I'll let you know when I've got it up and running.
